Before I knew it, autumn flew by and now Christmas is right around the corner. Winter mornings are the perfect time to enjoy a warm and comforting bowl of oatmeal, and I love to dress up an everyday bowl of oats with rich coconut milk and gorgeous winter fruits like pomegranates…
Like strands of rubies!
Today, I will share with you a quick recipe to for coconut oatmeal dressed with some of my favorite winter fruits. It takes just a few extra minutes to prepare, and the end result is doubly delicious!

Ingredients:
Oatmeal (1 cup)
Coconut milk (2 cups)
Coconut flakes (2 tablespoons)
Honey or brown sugar, as desired
Winter fruits, as desired
Directions:
- Start with the oatmeal that you already have in your pantry. Here, I used one cup of organic stovetop oats. For winter fruits, I used my favorite of the season, pomegranate!
- Cook the oats with coconut milk and coconut flakes in a small pot over low heat. The coconut flakes add a mild sweetness and a touch of texture to the oatmeal. If you prefer a bit more sweetness, add honey or brown sugar as needed. Stir the oatmeal as it cooks to prevent any lumpiness. Top with your favorite winter fruits, and voila!
My favorite combination: Coconut oatmeal with pomegranate, and a few festive slices of star fruit. The coconut milk adds a wonderful layer of creaminess. Persimmon also makes a great companion to coconut oatmeal. For a little extra crunch, sprinkle sliced almonds on top.
